Liz's Family Favourite Fruitcake
Ingredients
250g self-raising flour
½ tsp ground mixed spice
½ tsp ground cinnamon
125g margarine
125g soft brown sugar
125g currants
50g glacé cherries, quartered
1 large egg
75ml milk
demerara sugar, for sprinkling (optional)
Method
1. Heat oven to 180C, 160C(fan), Gas 4.
Grease and line a square 8" cake tin.
2. Cream the margarine and sugar together.
Add the egg, milk and flour, and beat thoroughly. Add the fruit, mixed spice and cinnamon, and combine.
3. Pour the batter in to the cake tin, sprinkle with a little demerara sugar (optional), and bake for 1-1¼ hours until the top is firm but springy to the touch; a skewer inserted in to the centre of the cake should come out clean.
Leave to stand in the tin for a few minutes, then turn out on to a wire rack to cool.
